Chocolate Cherry Coke Pokéball Cupcakes

After browsing Pinterest, I had a board full of ideas for Pinkie’s 9th birthday. She wanted a Pokémon theme, and I was more than happy to oblige. (Ahem— these Pokémon ears were also a hit.) While there were a lot of awesome cake ideas, I opted for my favorite, which were these awesome Pokéball Cupcakes from Awesome with Sprinkles.

With those pictures in mind, I set out to make my own Pokéball cupcakes, but with a twist: chocolate cherry coke. I’ve made cake in the past using soda pop, so I was looking forward to it. But let me tell you now, almost nothing went the way I wanted it to. So I’ll tell you exactly what I did, with recommendations on what to add in addition to or, in the case of one particular item, what to use instead.

Materials:

  • Box of chocolate cake mix; I used Pillsbury Devil’s Food cake mix
  • One can of white frosting; I used Duncan Hines fluffy white
  • One cup of cherry coke to replace the water in the directions
  • Red sugar sprinkles
  • White candy for the middle piece; I used white M&Ms

Materials I should have used:

  • Cherry juice to really bring out the cherry flavor, since the cherry coke was almost undetectable
  • Black piping frosting, instead of the gel food coloring. I don’t know why but for some reason it didn’t click in my head what a giant freaking mess that was going to create. It also created another problem…

First, I baked the cupcakes and let them cool completely. I put the red sugar in a dish deep enough to dip the cupcakes and then began frosting them one by one with just a regular butter knife.

I dipped each cupcake into the red sugar on one side to get the red half of the Pokéball. This wasn’t super even, but it was easy to use a spoon to fill in the patchy bits.

I used the black gel (make sure to use regular piping frosting!) and made the line straight across, with a circle in the middle.

Then, I pressed the M&M into the black circle, M side down. Looks cute, right? Errr….

…not so much the next day. The sugar absorbed the gel quite a bit. They were still kinda cute but nothing like they would have looked if I’d just done it right in the first place and used regular piping frosting. Whoops! Ok, so, they’re not the best Pokéball cupcakes on the block. But hey, live and learn, right? I’ve never been particularly good at baking anyway. But hey, at least the kids loved them!
